The Boeri are chocolates filled with a whole cherry and sour cherry liqueur, maraschino, cherry brandy or kirsch, short of a cherry flavored liqueur.
The Boeri are a Piedmontese confectionery specialties, particularly the Cuneo area, where there are numerous artisan companies that produce them (Bodrato in particular), but are also produced in some provinces of Lombardy.
The history and origins of the Boeri chocolates is not very clear, it seems to have been invented in the early twentieth century by a Swiss confectioner Emil Gerbeaud who moved from Geneva to Budapest and opened her bakery, the Café Gerbeaud still exists.
Emil wanted to exports to Hungary, the refined French taste and invented these chocolates and around the world are known just as Gerbeaud bonbons.
Then, like Hungary have become a specialty of Northern Italy is not clear, nor why they have taken the name of Boeri … probably because the color of the paper that enclosed them, fire red, was the same tunics of Boer soldiers South Africans.
Production of the Boeri chocolates
Many manufacturers of Boeri Northern Italy you do send the best cherries from Vignola (a city particularly suited to the production of calluses blacks, young and sweet, in the province of Modena), rather than using local cherries, smaller and more asprigne as those of Garbagna (AL).
The cherries are the stalk, but not the core, and being marinated in brandy for a few months, then used as a filling of the Boeri, produced in three variants, with dark chocolate, with milk chocolate or white chocolate.
